- 22 oz raspberries (fresh or frozen)
- 2 lemons (juiced)
- 1 cup unsalted butter
- 1 ½ cup water
- ½ cup granulated sugar
- 4 large eggs
- 4 large egg yolks
- 1 cup granulated sugar
- ⅛ teaspoon sea salt
- 1 lb mascarpone cheese
- 1 cup whipping cream (cold)
- 2 cups raspberry curd (cooled or room temperature)
- ½ cup granulated sugar
- 2 packs ladyfingers
- Fresh raspberries (for decorating)
- Lemon slices (for decorating)
Instructions
- Prepare the raspberry curd by cooking raspberries, lemon juice, water, and sugar in a saucepan until blended. Strain and mix in butter until smooth.
- In a large bowl, whisk eggs, yolks, sugar, and salt until fluffy. Fold in mascarpone cheese.
- Whip cream to stiff peaks and gently fold into the mixture.
- Dip ladyfingers in lemon juice and layer half in a baking dish. Add half of the filling and raspberry curd, then repeat layers.
- Chill for at least 4 hours before serving, garnished with fresh raspberries and lemon slices.
