Ingredients
- 1 large rack of lamb (1.25–2 lbs), cut in half
- Salt and pepper, to taste
- 3 tablespoons olive oil
- 1 cup beef panko
- 1 tablespoon minced garlic
- 1/2 cup grated parmesan
- 1/4 cup fresh parsley
- 3 tablespoons cilantro
- 2 sprigs rosemary
- 2–3 tablespoons Dijon mustard
Instructions
- Preheat your oven to 400°F.
- Season the lamb with salt and pepper on both sides, then score the fat and cut it in half.
- Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat and sear the lamb for about 2 minutes per side.
- Transfer the skillet to the oven and roast for about 8 minutes.
- Meanwhile, combine beef panko, garlic, parmesan, parsley, cilantro, rosemary, and remaining olive oil in a food processor; pulse until mixed.
- Remove lamb from oven; coat generously with Dijon mustard then dip into the herb crust mixture.
- Return to the oven for an additional 5 minutes; let it rest for 5-10 minutes before slicing.
