  • 1 large rack of lamb (1.252 lbs), cut in half
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 1 cup beef panko
  • 1 tablespoon minced garlic
  • 1/2 cup grated parmesan
  • 1/4 cup fresh parsley
  • 3 tablespoons cilantro
  • 2 sprigs rosemary
  • 23 tablespoons Dijon mustard

Instructions

  1. Preheat your oven to 400°F.
  2. Season the lamb with salt and pepper on both sides, then score the fat and cut it in half.
  3. Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat and sear the lamb for about 2 minutes per side.
  4. Transfer the skillet to the oven and roast for about 8 minutes.
  5. Meanwhile, combine beef panko, garlic, parmesan, parsley, cilantro, rosemary, and remaining olive oil in a food processor; pulse until mixed.
  6. Remove lamb from oven; coat generously with Dijon mustard then dip into the herb crust mixture.
  7. Return to the oven for an additional 5 minutes; let it rest for 5-10 minutes before slicing.
