Ingredients
- 2 small sweet potatoes
- 1 yellow onion
- 1 red or orange bell pepper
- 4 salmon fillets
- 2 teaspoons chipotle chili powder
- 2 teaspoons smoked paprika
- 2–3 cups kale or spinach
- 1/2 cup plain Greek yogurt
- Juice of 1–2 limes
Instructions
- Preheat your oven to 425°F (220°C).
- On a rimmed baking sheet, toss sweet potatoes, onions, bell pepper with olive oil and season with salt and pepper. Roast for 20 minutes.
- While roasting, season salmon fillets with chipotle chili powder, smoked paprika, minced garlic, salt, and pepper; drizzle with olive oil.
- After 20 minutes, push veggies to one side and place salmon on the other side; roast for an additional 10-20 minutes until cooked through.
- For the sauce, blend yogurt, lime juice, honey, cilantro, and jalapeño in a blender until smooth.
- Serve salmon and veggies over quinoa or greens; drizzle with the special sauce.
