  • 1 teaspoon Black Pepper
  • Grapeseed Oil
  • 9 cloves Garlic
  • 2 teaspoons Oregano
  • 3 sprigs Fresh Thyme
  • 3 sprigs Fresh Rosemary
  • 0.5 shallot Shallot
  • Red apple vinegar or balsamic vinegar

Instructions

  1. Prepare the herb paste by mixing garlic, oregano, thyme, rosemary, shallot, grapeseed oil, salt, black pepper, and vinegar in a bowl until smooth.
  2. Rub the herb paste generously over the rack of lamb.

  4. Smoke the lamb for approximately 150 minutes or until it reaches an internal temperature of 130°F (54°C) for medium-rare.
