Ingredients
- 1 1/3 c all-purpose flour
- 1/8 tsp salt
- 3 eggs
- 2 tbsp olive oil
- 8 tbsp granulated sugar
- 7 oz Ricotta cheese
- 1 lemon (zested and juiced)
- 1 tsp vanilla extract
- 1 tbsp icing sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In one bowl, whisk together the flour and salt.
- In another bowl, blend three eggs, olive oil, and granulated sugar until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- For the Ricotta filling, mix two eggs, sugar, lemon zest, Ricotta cheese, vanilla extract, and lemon juice in a separate bowl until smooth.
- Fill each muffin cup with batter, add the Ricotta filling on top, then cover with more batter.
- Bake for about 50 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before serving.
