Ingredients
- 1 block Halloumi cheese (Sliced into thick pieces)
- 1 cup Cooked quinoa
- 1 cup Cherry tomatoes (Halved)
- 1 cup Cucumber (Diced)
- 1/2 medium Red onion (Thinly sliced)
- 1/2 cup Kalamata olives (Pitted)
- 1/4 cup Fresh parsley (Chopped)
- 3 tablespoons Olive oil (Extra virgin recommended)
- 2 tablespoons Lemon juice (Freshly squeezed)
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper (Freshly ground)
Instructions
- Slice the halloumi cheese into thick pieces. Dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the parsley.
- Heat a frying pan over medium heat and add 1 tablespoon of olive oil. Once hot, add the halloumi in a single layer and cook for 2-3 minutes on each side until golden brown.
- In a mixing bowl, whisk together remaining olive oil, lemon juice, salt, and black pepper to make the dressing.
- In two serving bowls, place half of the cooked quinoa as a base. Top with crispy halloumi slices and all prepared vegetables.
- Drizzle the dressing over each bowl and toss gently if desired.
