- 2 tsp olive oil
- 4 large eggs
- 1 cup heavy cream
- ½ tsp salt

- 6 oz baby spinach
- 1 cup onion (finely chopped)
- 1 cup feta cheese (crumbled)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, salt, and garlic powder. Melt butter and mix until combined. Press into a pie dish and pre-bake for 10 minutes.
- Sauté onions in olive oil for 5–6 minutes; then add spinach until wilted.
- In another bowl, whisk together eggs, cream, salt, and pepper until frothy.
- Layer half of the sautéed mixture and feta into the crust; repeat with remaining ingredients.
- Bake on the lower rack for 30 minutes, then move to the upper rack for an additional 15 minutes or until set.
- Cool slightly before serving.
