  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, combine crushed graham crackers (or golden Oreos) with melted butter and press into the bottom of the pan.
  3. In another bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, then stir in sour cream, vanilla extract, and strawberry puree.
  4. Pour the cheesecake mixture over the crust and bake: mini bites for 20-25 minutes or large pan for 35-40 minutes until set but slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours.
  6. For the topping, mix crushed Oreos with freeze-dried strawberries and melted butter; sprinkle over chilled bites before serving.
