  • 16 ounces cream cheese (softened)
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice (freshly squeezed)
  • 1 cup cold whipping cream (chilled)
  • 3 tablespoons strawberry vegan gelatin
  • 8 ounces Cool Whip

Instructions

  1. Prepare the crust by mixing melted butter, graham cracker crumbs, sugar, and almond extract. Press into a 9×13 inch dish.
  2. Layer sliced strawberries on top of the crust.
  3. Beat softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth.
  4. Whip cold cream until stiff peaks form and fold into the cream cheese mixture.
  5. Spread the cream cheese mixture over the strawberries and prepare the strawberry vegan gelatin according to package instructions. Pour it over the top layer.
  6. Refrigerate for at least 2 hours before serving.
