Ingredients

  • 300 g spelt flour or wheat flour
  • 200 g butter (room temperature)
  • 100 g sugar
  • 1 packet vanilla sugar
  • 1 egg yolk
  • 1 pinch of salt
  • 225 g flour (for streusel topping)
  • 100 g sugar (for streusel topping)
  • 1 tsp cinnamon
  • 125 g cold butter (for streusel topping)
  • 400 g raspberry jam

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the spelt or wheat flour, room temperature butter, sugar, vanilla sugar, egg yolk, and salt. Mix until combined and form into a dough ball. Chill in the refrigerator.
  3. For the streusel topping, mix together the flour, sugar, cinnamon, and salt in another bowl. Add cold butter pieces and crumble until it resembles coarse crumbs.
  4. Roll out the chilled dough to about 0.5 cm thick and cut into desired shapes on the lined baking tray.
  5. Place about 1 teaspoon of raspberry jam on half of the cookie shapes and sprinkle with streusel topping.
  6. Bake for approximately 10 minutes or until golden brown. Allow cooling before serving.
