Ingredients
- 300 g spelt flour or wheat flour
- 200 g butter (room temperature)
- 100 g sugar
- 1 packet vanilla sugar
- 1 egg yolk
- 1 pinch of salt
- 225 g flour (for streusel topping)
- 100 g sugar (for streusel topping)
- 1 tsp cinnamon
- 125 g cold butter (for streusel topping)
- 400 g raspberry jam
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine the spelt or wheat flour, room temperature butter, sugar, vanilla sugar, egg yolk, and salt. Mix until combined and form into a dough ball. Chill in the refrigerator.
- For the streusel topping, mix together the flour, sugar, cinnamon, and salt in another bowl. Add cold butter pieces and crumble until it resembles coarse crumbs.
- Roll out the chilled dough to about 0.5 cm thick and cut into desired shapes on the lined baking tray.
- Place about 1 teaspoon of raspberry jam on half of the cookie shapes and sprinkle with streusel topping.
- Bake for approximately 10 minutes or until golden brown. Allow cooling before serving.
