  • ¾ cup granulated sugar

  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar
  • 2 cups all-purpose flour
  • 1 cup spring-colored M&Ms
  • ½ cup Easter sprinkles
  • 3 tablespoons unsalted butter, for frosting
  • 1½ cups powdered sugar
  • Additional heavy whipping cream or milk

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch round cake pan with nonstick spray.
  2. In a mixing bowl, cream together the softened butter and granulated sugar. Beat in the egg and vanilla until combined.
  3. Add baking soda, salt, and cream of tartar; mix well. Gradually incorporate flour until just combined. Fold in M&Ms and sprinkles.
  4. Spread batter evenly in prepared pan and optionally top with more M&Ms. Bake for 19–22 minutes until edges are lightly golden.
  5. Cool completely before making the frosting by beating remaining butter with powdered sugar, adding salt and vanilla, then incorporating heavy cream for spreadability.
  6. Frost cooled cake and top with extra sprinkles.
