- 1 box white cake mix
- 1 ½ cups diced strawberries
- 1 ½ cups raspberries
- 2 ½ cups blueberries
- ½ cup sugar (for red sauce)
- 1 Tablespoon lemon juice (for red sauce)
- 1 Tablespoon water (for red sauce)
- 2 teaspoons vegan gelatin powder (for red sauce)
- ½ cup sugar (for blue sauce)

- 8 oz cream cheese (room temperature)
- 2 cups heavy whipping cream
- 2 teaspoons vanilla
- 1 cup powdered sugar
- Fresh berries for garnish
Instructions
- Bake the white cake mix according to package directions in a 9 x 13-inch dish. Allow to cool and poke holes in the cake.
- Prepare red sauce by simmering strawberries and raspberries with sugar, lemon juice, and water. Bloom and add vegan gelatin.
- Prepare blue sauce similarly with blueberries.
- Fill the holes in the cooled cake alternately with red and blue sauces, then refrigerate.
- Beat cream cheese and powdered sugar until smooth. Whip heavy cream separately until stiff peaks form.
- Combine half of the whipped cream with the cream cheese mixture and spread over the cooled cake.
- Top with remaining whipped cream and garnish with fresh berries before serving.
