Ingredients
- 1 1/4 cups (177g) all-purpose flour
- 1 1/4 cups (110g) old fashioned rolled oats
- 1/2 tsp (heaping) salt
- 1/2 tsp baking soda
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) packed light-brown sugar
- 3/4 cup (170g) unsalted butter (melted)
- 1 tsp vanilla extract
- 1 (14 oz) can sweetened condensed milk
- 1 Tbsp lemon zest
- 1/3 cup (80ml) fresh lemon juice
- 2 large egg yolks
- 1/2 tsp lemon extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, oats, salt, baking soda, granulated sugar, and brown sugar.
- Stir melted butter and vanilla into the dry mix until moistened.
- Press half of the mixture into a greased 8 x 8-inch baking dish and bake for 15 minutes.
- For the filling, whisk together sweetened condensed milk, lemon juice, zest, egg yolks, and lemon extract until blended.
- Pour filling over baked crust and sprinkle remaining crumb mixture on top.
- Bake for an additional 23-26 minutes until golden.
- Let cool before refrigerating for at least 30 minutes; slice into squares before serving.
