Ingredients

  • 4 tablespoons unsalted butter
  • 10 ounces mini vegan marshmallows
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a nonstick saucepan, melt the unsalted butter over medium-low heat. Stir in the mini vegan marshmallows until completely melted and smooth.
  2. Remove from heat and fold in the crispy rice cereal and crushed graham crackers until well combined.
  3. Transfer the mixture onto greased parchment paper and press down into a rectangle about ½-inch thick.
  4. Spread the chocolate spread or melted chocolate evenly over the pressed mixture and sprinkle with remaining mini vegan marshmallows.
  5. Carefully roll the mixture into a tight log using parchment paper as a guide.
  6. Wrap in parchment paper and refrigerate for 30–45 minutes until firm.
  7. Melt semi-sweet chocolate chips with coconut oil, drizzle over the chilled log, then slice into rounds.
